Valencia established the first and only Associate in Science Degree program with a major in culinary management in Central Florida in 1997 to meet the growing needs for culinary managers in the Orlando area theme parks, restaurants, and hotels.

Currently, there are over 40,000 culinary positions in the Central Florida area, a five county region. Within the next 10 years, it is expected that there will be over 50,000 jobs available for skilled culinary professionals in the Central Florida area.

The culinary management program can be completed in two years. It is a 64-credit hour program with culinary lab courses in Quantity Food Production I, II, and III, International and Regional Foods, Classical Cuisine, Baking and Pastries I and II, and Garde Manger. Additional courses include Sanitation Management, Food Service Computer Applications, Psychology in Business and Industry, Human Relations and Supervisory Development, Healthy Cuisine/Nutrition, Catering and Banquet Management, Food and Beverage Management, Food and Beverage Cost Control and an Internship.

Tuition is approximately $1500 per year (in-state residents) or $5,000 (out-of-state residents). Books, fees, and required materials (e.g., knives, uniforms) are extra. Room and board is not included. There are no dormitories; therefore off-campus housing is necessary.

Scholarships and financial aid for culinary are available for those who qualify. The Hospitality and Tourism Institute is a division of Valencia Community College, a public institution. The college is accredited by the Southern Association of Colleges and Schools (since 1969).
